Not sure if you’re anything like me, wondering how some people just seem to be so capable in all things Christmas baking?
So, I decided to take matters into my own hands and pick the brain of an expert. Not just any expert mind you, April Iverson, our amazingly talented and first place winning Gingerbread artist here at the Inn.
As the official home of Canada’s National Gingerbread Showcase, one assumes that I, as the lowly marketing person, would at least have a go-to recipe for gingerbread but alas that is not the case…until now.
Here it is folks – hot out of the oven, fresh off the cookie sheet and rolled out just for you…THE best gingerbread recipe evah!!
- 1 1/2 cups butter
- 1 cup of brown sugar
- 1tsp baking soda
- 3/4 tsp salt
- 2 1/4 tsp ground ginger
- 1tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 2 eggs
- 3/4 cups molasses
- 3 1/3 cups pastry flour
Sift pastry flour. Cream butter, brown sugar, spices, salt and soda. Add molasses and mix. Add eggs slowly and mix then add pastry flour and mix just till combined.
Allow to rest in fridge for at least 1 hour (perfect amount of time for a rum & eggnog if you ask me) and roll out to 1/4 inch thick and cut our men or women as the case maybe.
Bake at 350F till done. Check after 7 minutes, may need as long as 10 minutes, again time enough for another rum and eggnog. #tistheseason
